16 Restaurant-Quality DIY Pizzas That Are Fresher, Healthier And Tastier

Why tip delivery for a gut-busting pizza, when fired-up DIY pizzas are fresher – and loaded with healthier toppings?

Step 1: Do The Dough

  1. Pick up a 500g pack of dough from the supermarket (enough for 4 pizzas), or kindly ask a pizzeria to sell you one of theirs. Then . . .
  2. On a lightly floured surface, stretch and/ or roll the dough to 10-12mm thick. The shape doesn’t matter as long as the dough fits in your kettle braai.
  3. Preheat your braai to indirect, medium heat. Lightly oil the grid. Set up a work area nearby with your toppings in reach.
  4. Brush one side of the dough with oil. Place that side over indirect heat and grill until lightly charred, 1 to 2 minutes. Flip the dough onto the work area cooked side up.
  5. Add the spread and toppings, and return the dough to indirect heat. Close the lid and cook until the edges are crispy, 5 to 7 minutes. Garnish, allow to cool a few minutes, slice, and then serve. Makes 1 large pizza

Step 2: Prep The Toppings

Grill vegetables like baby marrow, aubergine, bell peppers, onions, and ’shrooms before making your pizza. Most produce won’t turn tender if added raw. All raw meats must be cooked before adding. For any ingredient without a measurement, add to taste. This is more of an art than a science.

Toppings: 450g cooked and sliced steak, 2 sliced yellow peppers, 1 cup grilled and sliced button mushrooms, 1 cup grated provolone or mozzarella

Finish: Sauteed sliced red onions

Spread: Tomato paste

Toppings: 2 cups shredded lettuce, 450g cooked lean beef mince, 1 cup Gorgonzola

Finish: Gherkin slices
